Interesting project.
Some considerations, by someone who is not an expert, but some has some experience in "hobby" bike repairing and "professional" automotive works:
1) Something like an electromagnetic brake could be used, or simple a MTB disk brake will be not very expensive and already available of scavenged from some waste deposits.
2) Batteries, car batteries are somewhat dangerous, as they tend to produce hydrogen when charged, a sealed container is required, and probably it is best to use gel batteries as in case of accident you have not to cope with acid spilling around, there are already some e-bike batteries around, and LiOn cells decently cheap with charger circuits are not too expensive as a "safe alternative".
3) I think that some differentials are available around, as there are some thing like these around, maybe some research will help to find "ready made" things, that will help to reproduce the design even for those who don't have a full "mechanical shop". A grinder, a welding machine, a scroll saw and a set of tools will be a decent requirements, maybe some alternatives could be proposed, a ready made one and some "diy solutions" depending on skills and tools availabilty. (maybe in some 3rd world countries work is more cheap than acquiring parts from foreing countries, maybe in some 1st world countries there are some enthusiast more prone to buy something ready made and assemble things, with some work in between).

thank you for your cooperation. when upcaycling, in my opinion, you can use any rechargeable battery that is available, e.g. billions of people want velomobile riders. Nickel-iron batteries are best, they do not burn, are recyclable and have been proven to last more than 100 years. I have one that is over 80 years old and works.

you can also use everything possible with the brakes. a vise seems to be the easiest. it is only required in the event of a storm or hurricane.
