Offsetting edges does that. It's normal. If you offset a polyline in another CAD program, you will probably notice the same thing.

For the time being, you will have to enter the final depth by hand in the pocket properties. We will fix most of pocketing sometime and make it so that there are some assumptions made based on selection. Sorry that we aren't there yet.
